Protease is a general term for a class of enzymes that hydrolyze protein peptide chains. They are divided into endopeptidase and endopeptidase according to their degradation polypeptides. Protease inhibitors refer to substances that bind to some groups on the active center of the protease molecule, causing a decrease in the activity of the protease or even its disappearance, but not denaturing the enzyme protein.
